  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or chives for topping

Instructions

  1. Prepare the chicken: Use about 3 cups of cooked, shredded chicken. Rotisserie chicken works well. If cooking fresh, poach or bake chicken breasts until fully cooked, then shred with forks (10-15 minutes).
  2. Mix the base: In a large bowl, combine softened cream cheese, buffalo sauce, and ranch or blue cheese dressing. Stir until smooth and creamy.
  3. Add cheese and seasoning: Fold in shredded cheddar, shredded mozzarella, garlic powder, onion powder, salt, and pepper.
  4. Combine chicken and dip base: Add shredded chicken to the bowl and stir until evenly coated with the buffalo cheese mixture.
  5. Transfer to crockpot: Pour the mixture into the slow cooker insert and spread evenly. Cover with the lid.
  6. Cook low and slow: Set crockpot to low and cook for 2 to 3 hours. Stir around the 2-hour mark. Avoid cooking on high to prevent drying out.
