  • 4 ounces (115 grams) ground beef or turkey (optional)
  • 2 cloves garlic, minced
  • 1 cup (240 ml) diced tomatoes, canned or fresh
  • 2 cups (480 ml) beef or vegetable broth
  • 1/2 cup (120 ml) tomato sauce
  • 2 tablespoons cream cheese, softened
  • 1/4 cup (25 grams) grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Turn Instant Pot to ‘Sauté’ setting and add olive oil. Once hot, add minced garlic and cook until fragrant, about 30 seconds.
  2. Add ground beef or turkey, breaking it apart with a spoon. Cook until browned and no longer pink, about 8-10 minutes.
  3. Pour in diced tomatoes, tomato sauce, and broth. Sprinkle Italian seasoning, salt, and pepper. Stir well, scraping any browned bits off the bottom.
  4. Break spaghetti noodles in half and layer evenly on top of the liquid. Do not stir; press down gently to submerge as much as possible.
  5. Secure lid and set valve to ‘Sealing.’ Cook on ‘Manual’ or ‘Pressure Cook’ high for 8 minutes. Allow about 10 minutes for pressure to build before cooking.
  6. Perform a quick release by switching valve to ‘Venting.’ When pin drops, open lid and gently stir spaghetti; it should be tender and saucy.
  7. Stir in softened cream cheese and Parmesan until melted and smooth. Add a splash of broth or milk (about 2 tablespoons) if sauce is too thick.
  8. Garnish with chopped basil or parsley if desired and serve immediately.

Notes

Do not stir pasta before cooking to prevent clumping. Use enough liquid to avoid runny sauce. Quick release pressure carefully to avoid burns. Soften cream cheese before adding for smooth sauce. Broken spaghetti cooks more evenly and fits better in the pot. For vegetarian version, omit meat and add mushrooms or extra veggies. For dairy-free, substitute cream cheese with coconut cream and Parmesan with plant-based cheese.
