  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Juice of 1 lime
  • Fresh cilantro, chopped (optional, for garnish)
  • Flour or corn tortillas, warmed (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken breasts into thin strips, about 1/2 inch wide.
  3. Wash and slice the bell peppers and onion into similar-sized strips.
  4. In a large mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper to form a smooth spice paste.
  5. Add the sliced chicken and veggies to the bowl and toss thoroughly until evenly coated with the spice mixture.
  6. Spread the chicken and veggies out in a single layer on a rimmed sheet pan, keeping them spaced to avoid overcrowding.
  7. Roast in the oven for 20-25 minutes, stirring halfway through at about 12 minutes for even cooking and browning.
  8. Check that the chicken reaches an internal temperature of 165°F (74°C) and has crispy edges; peppers and onions should be soft with some charred bits.
  9. Remove from oven and squeeze fresh lime juice over the fajitas; toss gently to combine.
  10. Warm tortillas and serve the chicken and veggies hot, garnished with chopped cilantro if desired.

For extra crispy chicken, broil for 2-3 minutes at the end but watch closely to avoid burning. Avoid overcrowding the pan to prevent steaming. Use fresh spices for best flavor.
