  • 1 pound fresh strawberries, hulled and halved
  • Shortcake or biscuit, cut into 1-inch cubes (store-bought or homemade)
  • 8 ounces mascarpone cheese
  • 1/4 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • Lemon zest from half a lemon (optional)
  • 6 to 8 inch wooden skewers

Instructions

  1. Rinse about 1 pound of fresh strawberries and pat dry. Hull and slice them in half if large.
  2. Slice your shortcake or biscuit into roughly 1-inch cubes.
  3. In a medium bowl, combine 8 ounces mascarpone cheese with 1/4 cup heavy cream. Beat until smooth but still thick.
  4. Add 2 tablespoons powdered sugar, 1 teaspoon vanilla extract, 1 tablespoon honey, and optional lemon zest. Whip gently to combine.
  5. Thread a shortcake cube onto each wooden skewer, followed by a strawberry half. Alternate until the skewer is full, ending with a strawberry on top.
  6. Arrange skewers on a platter alongside a bowl of mascarpone dip. Optionally drizzle honey or sprinkle fresh mint leaves before serving.

Notes

Assemble skewers no more than 2 hours before serving to prevent sogginess. Brush shortcake cubes with simple syrup or orange juice for added moisture if desired. The mascarpone dip can be made up to 24 hours ahead and whisked before serving. For grilling, soak skewers in water for 10 minutes and grill 1-2 minutes per side.
