Ingredients

Scale
  • 3 cups cooked shredded chicken (rotisserie chicken works well)
  • ½ cup buffalo sauce (e.g., Frank’s RedHot Original)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon ranch seasoning mix (optional)
  • 1 bunch celery, cut into 3-inch sticks
  • 1 cup carrot sticks
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes
  • 1 box (about 8 ounces) crackers (mix of buttery rounds and crispy water crackers, e.g., Club crackers and Wheat Thins)
  • 1 cup pretzel sticks
  • ½ cup blue cheese crumbles
  • ½ cup ranch or blue cheese dressing
  • Optional: sliced jalapeños, pickled red onions, extra hot sauce

Instructions

  1. Prepare the buffalo chicken: In a medium mixing bowl, combine 3 cups shredded cooked chicken, ½ cup buffalo sauce, 2 tablespoons melted unsalted butter, and 1 tablespoon ranch seasoning mix (if using). Toss until evenly coated. Set aside.
  2. Wash and cut the veggies: Rinse and dry all vegetables. Cut celery into 3-inch sticks, carrots into thin sticks or rounds, cucumber into rounds or half-moons, and halve cherry tomatoes if large. Pat dry with paper towels.
  3. Arrange the small bowls first: Place small bowls for ranch or blue cheese dressing and blue cheese crumbles on a large wooden board or serving platter. Space them out.
  4. Add the buffalo chicken: Spoon the prepared buffalo chicken into a small pile or bowl on the board, creating a ‘mountain’ in the center or off to one side. Drizzle extra buffalo sauce on top.
  5. Layer in the veggies: Arrange celery sticks, carrot sticks, cucumber slices, and cherry tomatoes around the chicken and dips in clusters.
  6. Fill in with crackers and pretzels: Fan out crackers and pretzel sticks in remaining empty spaces, leaving some breathing room.
  7. Add garnishes and final touches: Sprinkle blue cheese crumbles over the buffalo chicken or place in a small pile. Add optional jalapeños or pickled onions in small clusters. Garnish with fresh herbs like parsley or chives.
  8. Serve immediately: Best enjoyed within an hour of assembly. Place extra crackers and dressing on the side for refills.

Notes

Prep the chicken up to two days in advance. Keep crackers separate until serving to avoid sogginess. Let dressing sit at room temperature for 15 minutes before serving. For a vegetarian version, swap chicken for crispy buffalo cauliflower bites.
