Easy Gooey Baked Cranberry Brie Bites

These easy gooey baked cranberry brie bites are perfect holiday appetizers combining warm melted brie, sweet-tart cranberries, and flaky puff pastry for a delicious and elegant treat.

  • 1 package (2 sheets) puff pastry, thawed
  • 8 ounces brie cheese, rind removed and cut into small cubes
  • 1/2 cup cranberry sauce (homemade or store-bought)
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • 1 tablespoon honey, for drizzling
  • 1 large egg, beaten (for egg wash)
  • Flour, for dusting work surface

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Lightly flour your work surface and roll out the thawed puff pastry sheets to about 1/8 inch (3 mm) thick. Cut each sheet into 12 equal squares (about 3×3 inches).
  3. Remove the rind from the brie and cut it into 1-inch cubes.
  4. Place a cube of brie in the center of each pastry square. Top with about 1 teaspoon of cranberry sauce and sprinkle a pinch of fresh thyme if using.
  5. Bring the corners of each square together, pinching gently at the top to seal and form a pouch.
  6. Brush the outside of each bite with beaten egg for a golden crust.
  7. Arrange bites on the prepared baking sheet with a little space between them. Bake for 15-18 minutes until pastry is puffed and golden and brie is melted.
  8. Remove from oven and immediately drizzle with honey.
  9. Serve warm for best gooey texture.

Notes

Let puff pastry rest at room temperature for 10 minutes if stiff after thawing. Use egg wash lightly and evenly to avoid soggy spots. Remove brie rind for smoother melt. Avoid overfilling bites to prevent leaking. Optionally sprinkle flaky sea salt after baking for added crunch.
