  • 1 cup (90g) rolled oats
  • ½ cup (100g) packed brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish lightly with butter or non-stick spray.
  2. In a medium bowl, combine mixed berries, granulated sugar, lemon juice, and all-purpose flour. Toss gently to coat evenly.
  3. Transfer the berry mixture into the prepared baking dish, spreading evenly.
  4. In a large bowl, mix rolled oats, brown sugar, ground cinnamon, and salt.
  5. Cut in cold, cubed unsalted butter using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized bits.
  6. Stir in vanilla extract.
  7. Sprinkle the oat crumble evenly over the berry layer without pressing down.
  8. Bake for 35 to 40 minutes, until topping is golden brown and berry juices bubble at the edges. If topping browns too quickly, tent loosely with foil halfway through baking.
  9. Let the cobbler cool for at least 15 minutes before serving to allow filling to thicken.

Notes
