Instructions

  1. Rinse strawberries, blueberries, and raspberries gently under cool water. Slice the strawberries into about 1/4-inch thick slices. Pat all berries dry with paper towels to prevent excess moisture from making the trifle soggy.
  2. In a large chilled bowl, pour 2 cups (480 ml) of heavy cream. Add 2 tablespoons (15 grams) of powdered sugar and 1 teaspoon (5 ml) vanilla extract. Using an electric mixer on medium-high, whip until soft peaks form – when the cream holds its shape but still looks smooth and fluffy. Avoid overwhipping.
  3. Slice or cube about 10 ounces (280 grams) of angel food cake into roughly 1-inch pieces.
  4. Start with a layer of angel food cake cubes at the bottom of your trifle bowl (about one-third of the cake). Next, add a layer of mixed berries covering the cake evenly. Then spoon about one-third of the whipped cream over the berries and spread gently with a spatula. Repeat these layers two more times, finishing with a whipped cream topping.
  5. Sprinkle lemon zest over the top whipped cream layer for a fresh aroma and subtle zing.
  6. Cover the trifle with plastic wrap and refrigerate for at least 2 hours before serving to let the flavors meld and the cake soak up berry juices.

Notes

Use fresh, firm berries to avoid sogginess. Whip cream to soft peaks to prevent it from turning buttery. Chill the trifle for at least 2 hours or overnight for best flavor. For dairy-free, substitute coconut whipped cream. Frozen berries can be used if thawed and drained well.
