  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (230g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¾ cup (165g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 ½ cups mini chocolate chips (optional)
  • 1 quart (950 ml) vanilla ice cream, softened
  • ½ cup (125 ml) strawberry or raspberry sauce
  • ½ cup (125 ml) blueberry sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 3 to 4 minutes.
  4. Beat in eggs one at a time, then stir in vanilla extract until dough is smooth and creamy.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in mini chocolate chips gently.
  7. Using a cookie scoop or tablespoon, drop dough onto baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden but centers are still soft.
  9. Let cookies cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
  10. Slightly soften vanilla ice cream in a bowl. Gently fold in strawberry or raspberry sauce and blueberry sauce to create red, white, and blue swirls without overmixing.
  11. Place a scoop of swirled ice cream on the flat side of one cookie, top with another cookie, and press gently to spread ice cream evenly.
  12. Wrap each sandwich in plastic wrap or place in an airtight container. Freeze for at least 2 hours or until firm.
  13. Remove from freezer 5 minutes before serving for easier biting.
