  • 1 cup (240ml) eggnog
  • ½ cup (120g) plain full-fat Greek yogurt
  • 1 tablespoon chia seeds
  • 12 teaspoons maple syrup (optional)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • Optional toppings: chopped pecans, sliced almonds, fresh or dried cranberries, whipped cream

Instructions

  1. Combine 1 cup rolled oats, 1 tablespoon chia seeds, ¼ teaspoon ground nutmeg, ¼ teaspoon ground cinnamon, and a pinch of salt in a mixing bowl or jar. Stir briefly to distribute spices evenly.
  2. Add 1 cup eggnog, ½ cup Greek yogurt, ½ teaspoon vanilla extract, and 1-2 teaspoons maple syrup (optional). Mix with a spoon or whisk until smooth and creamy.
  3. Seal the container tightly and refrigerate overnight or for at least 6 hours to allow oats and chia seeds to soak and thicken.
  4. In the morning, stir the oats. If too thick, add a splash of milk or eggnog to loosen. Top with desired toppings such as nuts, cranberries, or whipped cream. Serve cold or let sit at room temperature for 10 minutes.

Notes

Use old-fashioned rolled oats for best texture; instant oats get mushy. Chia seeds thicken the mixture and add fiber. Adjust maple syrup based on sweetness of eggnog. Can be made vegan by using dairy-free eggnog and yogurt alternatives. Store in airtight containers up to 3 days. Reheat gently if desired, adding milk or eggnog to loosen.
