Ingredients

  • Heavy whipping cream, cold (1 cup / 240 ml)
  • Rosé wine (3 tablespoons / 45 ml, dry or off-dry)
  • Powdered sugar (2 tablespoons / 15 g)
  • Vanilla extract (1 teaspoon / 5 ml)
  • Store-bought buttery shortbread or sugar cookies
  • Optional: edible glitter or pink sanding sugar
  • Fresh berries (strawberries, raspberries, blueberries)
  • Seedless grapes (red or green)
  • Assorted nuts (almonds, pistachios, or candied pecans)
  • Edible flowers (pansies or violets)
  • White chocolate shards or curls
  • Fresh mint leaves

Instructions

  1. Chill your mixing bowl and beaters for at least 15 minutes.
  2. Pour 1 cup (240 ml) of cold heavy whipping cream into the chilled bowl. Add 2 tablespoons (15 g) of powdered sugar and 1 teaspoon (5 ml) of vanilla extract.
  3. Slowly add 3 tablespoons (45 ml) of rosé wine, starting with less if unsure.
  4. Using a mixer on medium speed, whip the cream mixture until soft peaks form, about 3–5 minutes. Stop and check frequently to avoid overwhipping.
  5. Taste the rosé cream and adjust sweetness or rosé intensity by folding in a little extra powdered sugar or rosé gently.
  6. Set the rosé cream in the fridge while preparing the board.
  7. Arrange cookies on the serving board and optionally sprinkle edible glitter or pink sanding sugar on top.
  8. Place small dollops or piped rosettes of rosé cream on half of the cookies. Top with another cookie to make sandwich bites or serve cream beside cookies for dipping.
  9. Fill the board with fresh berries, seedless grapes, and nuts around the cookies. Use small bowls for nuts and white chocolate shards.
  10. Garnish the board with edible flowers and fresh mint leaves.
  11. Serve immediately or keep refrigerated until ready to enjoy. Assemble no more than 2 hours before serving to keep cookies crisp.
