  • 3 pounds pork shoulder, trimmed and cut into chunks
  • 1 cup barbecue sauce
  • 1/2 cup apple cider vinegar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 large bag sturdy tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup black beans, drained and rinsed (optional)
  • 1/2 cup pickled jalapeños
  • 1/2 cup diced red onion
  • 1 large ripe avocado, sliced or mashed
  • 1/4 cup fresh cilantro, chopped
  • Sour cream or Greek yogurt, for dolloping
  • Fresh lime wedges

Instructions

  1. Season pork chunks with smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Place pork in slow cooker or pressure cooker. Add apple cider vinegar and half the barbecue sauce (about 1/2 cup).
  3. Cook on low for 8 hours (slow cooker) or high pressure for about 60 minutes (pressure cooker).
  4. Once done, shred pork with two forks and stir in remaining barbecue sauce. Keep warm.
  5. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil.
  6. Spread a generous layer of tortilla chips evenly over the baking sheet.
  7. Spoon pulled pork evenly over chips. Sprinkle black beans if using, then top with shredded cheddar and Monterey Jack cheeses.
  8. Add pickled jalapeños and diced red onions.
  9. Bake in the oven for 10-15 minutes, or until cheese is melted and bubbly. Watch closely near the end to avoid burning chips.
  10. Remove from oven and immediately add sliced or mashed avocado, chopped cilantro, and dollops of sour cream or Greek yogurt.
  11. Serve with lime wedges on the side for squeezing.
