  • Frito corn chips or your favorite sturdy chip bags (individual serving size)
  • 1 lb ground beef or ground turkey for a leaner option
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • Taco seasoning mix (store-bought or homemade blend with chili powder, cumin, paprika, oregano, salt, and pepper)
  • 2 cups shredded cheddar cheese (about 200 g)
  • 2 cups shredded lettuce (loosely packed)
  • 1 cup diced tomatoes (about 150 g)
  • Jalapeños, sliced (optional)
  • 1 cup sour cream or Greek yogurt (240 ml)
  • ½ cup fresh cilantro, chopped
  • ½ cup green onions, sliced
  • Fresh lime wedges (for squeezing over the top)
  • 1 can black beans, rinsed and drained (15 oz or 425 g)
  • 1 cup sweet corn kernels (fresh, canned, or frozen)
  • Guacamole or sliced avocado (optional)
  • Hot sauce or salsa (your favorite brand or homemade)

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add 1 lb of ground beef and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 7-10 minutes. Drain any excess fat if needed.
  4. Sprinkle 2 tablespoons of taco seasoning evenly over the beef. Stir well to combine, adding ¼ cup of water to help the spices meld and create a saucy coating. Simmer for 3-5 minutes until thickened. Taste and adjust seasoning if desired.
  5. While the meat simmers, shred the cheddar cheese, chop the lettuce, dice the tomatoes, slice jalapeños if using, and chop cilantro and green onions. Arrange these in separate bowls or on a serving tray.
  6. In a small saucepan, warm the black beans and corn over low heat, stirring occasionally.
  7. Open individual-sized chip bags and place them standing upright in a container or basket to keep steady.
  8. Provide spoons or tongs for guests to scoop the meat, beans, cheese, and toppings into their chip bags.
  9. Encourage guests to build their own walking tacos by layering chips, meat, beans, cheese, lettuce, tomatoes, and all the fixings. Add a squeeze of lime and a dollop of sour cream or Greek yogurt for extra flavor.

Notes

Use a non-stick skillet for easier cooking and cleanup. Keep sour cream or Greek yogurt chilled until serving. To keep chip bags upright while filling, place them in tall glasses or bowls.
