  • 12 medium-sized fresh jalapeno peppers, halved and seeded
  • 1 pound ground sausage (mild or spicy pork sausage preferred)
  • 12 thin slices bacon (center-cut preferred)
  • 4 ounces cream cheese, softened
  • 1/4 cup brown sugar, packed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 tablespoon fresh parsley, chopped (optional garnish)
  • 1 tablespoon water (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wear gloves and slice each jalapeno in half lengthwise. Scoop out the seeds and membranes. Place jalapeno halves on a lined baking sheet.
  3. In a mixing bowl, combine ground sausage, softened cream cheese, garlic powder, onion powder, black pepper, and smoked paprika if using. Mix well until evenly blended.
  4. Fill each jalapeno half with the sausage mixture using a spoon or small ice cream scoop. Press filling gently to be level but not overflowing.
  5. Wrap each stuffed jalapeno half with one slice of bacon, securing with a toothpick if needed. Place seam-side down on the baking sheet.
  6. Mix brown sugar with 1 tablespoon water to make a spreadable glaze. Brush the glaze evenly over the bacon-wrapped poppers.
  7. Bake in the preheated oven for 20-25 minutes until bacon is crispy and glaze is caramelized. Watch closely after 20 minutes to avoid burning.
  8. Remove from oven and let cool for 5 minutes. Garnish with chopped fresh parsley if desired and serve warm.

Wear gloves when handling jalapenos to avoid skin irritation. Do not overstuff the jalapenos to prevent bursting bacon. If bacon crisps too fast, tent with foil and continue baking.
