  • Cherry or grape tomatoes
  • Fresh basil leaves, whole
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder (or freshly minced garlic)
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Wooden or metal skewers (soaked in water if wooden)

Instructions

  1. Cut chicken breasts into 1-inch cubes and place in a mixing bowl.
  2. Drizzle olive oil over chicken, then sprinkle garlic powder, salt, and black pepper. Toss to coat evenly.
  3. Marinate chicken for at least 15 minutes at room temperature or up to 1 hour in the fridge.
  4. In a small saucepan, combine balsamic vinegar and honey or brown sugar. Bring to a gentle simmer over medium heat, stirring occasionally.
  5. Reduce heat to low and simmer until thickened to a syrupy consistency, about 8-10 minutes. Remove from heat and let cool slightly.
  6. Thread skewers with one piece of marinated chicken, a cherry tomato, a folded basil leaf, and a mozzarella ball. Repeat 3-4 times per skewer.
  7. Preheat grill or grill pan to medium-high (about 400°F). Lightly oil the grill grates or pan.
  8. Grill skewers for 10-12 minutes, turning every 3-4 minutes until chicken reaches an internal temperature of 165°F.
  9. Arrange skewers on a platter and drizzle with warm balsamic glaze. Garnish with extra basil leaves if desired.
