  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the marinade by whisking together lemon juice, olive oil, minced garlic, rosemary, thyme, oregano, salt, black pepper, and optional red pepper flakes in a medium bowl.
  2. Trim excess fat from chicken breasts and cut into 1½-inch cubes for even cooking.
  3. Toss chicken pieces in the marinade until well coated. Cover and refrigerate for at least 30 minutes and up to 2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread the marinated chicken cubes onto skewers, leaving space between pieces for even cooking.
  6. Preheat grill to medium-high heat (375°F to 400°F). Clean and oil the grates.
  7. Grill skewers for 10-12 minutes, turning every 3-4 minutes until chicken reaches an internal temperature of 165°F.
  8. Remove skewers from grill and let rest for 5 minutes to allow juices to redistribute.
  9. Serve garnished with fresh lemon wedges and extra herbs if desired.

Marinate chicken between 30 minutes and 2 hours to avoid mushy texture. Use a meat thermometer to ensure chicken is cooked to 165°F. Let chicken rest after grilling for juicier bites.
