Flavorful One-Pot Cajun Chicken Alfredo

A quick and easy one-pot meal combining smoky Cajun spices with creamy Alfredo sauce, perfect for a comforting and flavorful dinner.

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning (homemade or store-bought)
  • 8 ounces fettuccine or linguine, broken in half
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus extra for serving
  • Salt and pepper to taste
  • A handful of fresh parsley, chopped

Instructions

  1. Pat the chicken pieces dry with paper towels and toss them in 1 tablespoon of Cajun seasoning until evenly coated.
  2. Melt 1 tablespoon of butter over medium-high heat in a large deep skillet. Add the seasoned chicken pieces and cook for 4-5 minutes, turning occasionally, until golden brown and almost cooked through. Remove chicken and set aside.
  3. Lower heat to medium, add remaining 2 tablespoons of butter to the skillet. Once melted, add minced garlic and sauté for 30 seconds to 1 minute until fragrant but not browned.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer, then add broken pasta pieces, pressing them gently into the liquid to submerge.
  5. Simmer uncovered on medium-low heat for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is tender and sauce thickens.
  6. Return cooked chicken to the skillet along with remaining Cajun seasoning (adjust to taste). Stir and cook for another 3-4 minutes until chicken is fully cooked and sauce is creamy.
  7. Remove skillet from heat and stir in grated Parmesan cheese. Taste and adjust salt and pepper as needed.
  8. Garnish with chopped fresh parsley before serving.

Notes

If the sauce becomes too thick, add a splash of chicken broth or cream to loosen it. Stir gently and watch the pasta closely to avoid overcooking. Let the dish rest 2-3 minutes off heat before serving to thicken the sauce and meld flavors.
