Flavorful Steak Bites Recipe with Sweet Potatoes & Peppers

Tender steak bites, caramelized sweet potatoes, and vibrant peppers come together in a one-pan meal that’s quick, satisfying, and packed with flavor.

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 2 large bell peppers, sliced
  • 2 tablespoons olive oil or avocado oil
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Start by cutting the steak into bite-sized cubes. Peel and dice the sweet potatoes into 1-inch cubes, and slice the bell peppers into strips. Mince the garlic and set everything aside.
  2. Place the steak cubes into a bowl and season generously with salt, pepper, smoked paprika, garlic powder, and onion powder. Toss to coat evenly.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the steak bites in a single layer. Cook for 2 minutes on each side until browned and slightly crispy. Remove the steak from the skillet and set aside.
  4. Add the remaining tablespoon of olive oil to the skillet. Add the sweet potatoes and cook for 10-12 minutes, stirring occasionally, until they are golden brown and tender. If they start sticking to the pan, add a splash of water to deglaze.
  5. Stir in the sliced bell peppers and cook for an additional 5-6 minutes until they’re slightly softened but still vibrant.
  6. Make a well in the center of the skillet and add the minced garlic and butter. Stir until the butter melts and the garlic is fragrant, about 1 minute.
  7. Add the steak bites back to the skillet and mix everything together. Cook for another 2 minutes to warm through. Garnish with fresh parsley, if desired, and serve immediately.
