  • 3 tbsp (38g) granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp (1 packet) active dry yeast
  • ½ cup (120ml) warm milk (around 110°F)
  • ¼ cup (60ml) unsalted butter, melted
  • 1 large egg, room temperature
  • 2 medium ripe bananas, mashed
  • ⅓ cup (75g) unsalted butter, softened
  • ½ cup (100g) light brown sugar
  • 1 tbsp ground cinnamon
  • 1 cup (120g) powdered sugar
  • 23 tbsp (30-45ml) milk
  • ½ tsp vanilla extract

Instructions

  1. Activate the Yeast: In a small bowl, combine the warm milk, sugar, and active dry yeast. Stir gently and let it sit for 5-10 minutes until frothy.
  2. Combine Wet Ingredients: In a large bowl, whisk together the melted butter, mashed bananas, and egg.
  3. Form the Dough: Add the frothy yeast mixture to the wet ingredients, then gradually mix in the flour and salt. Stir until a soft dough forms.
  4. Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 8 minutes until smooth and elastic. If using an electric mixer, knead with the dough hook for 5 minutes.
  5. Let It Rise: Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm spot for 1-1½ hours or until doubled in size.
  6. Prepare the Filling: Mix the softened butter, brown sugar, and cinnamon in a bowl until well combined.
  7. Roll Out the Dough: Punch down the risen dough and roll it out on a lightly floured surface into a rectangle (approximately 18×12 inches).
  8. Spread the Filling: Evenly spread the cinnamon sugar mixture over the rolled-out dough.
  9. Roll and Cut: Starting from one long edge, tightly roll the dough into a log. Slice into 12 equal rolls.
  10. Second Rise: Arrange the rolls in a greased 9×13-inch baking dish, cover, and let them rise for 30 minutes.
  11. Bake: Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until golden brown.
  12. Make the Glaze: While the rolls are baking, whisk together powdered sugar, milk, and vanilla extract until smooth.
  13. Glaze and Serve: Drizzle the glaze over warm rolls and serve immediately. Enjoy!
