Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (110°F/43°C), 1 tablespoon honey, and yeast. Stir gently and let sit for 5-10 minutes until foamy and bubbly.
  2. Mix the dough: In a large bowl or mixer bowl, whisk together flour, sugar, and salt. Add eggs, melted butter, remaining honey, and yeast mixture. Stir until a shaggy dough forms.
  3. Knead the dough: Knead by hand on a floured surface or with a stand mixer dough hook for 8-10 minutes until smooth, elastic, and slightly tacky but not sticky. Add flour 1 tablespoon at a time if too sticky.
  4. First rise: Lightly oil a clean bowl, place dough inside, cover with towel or plastic wrap, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. Shape the rolls: Punch down dough gently to release air. Divide into 12 equal pieces (about 2 ounces or 55g each). Shape each into a smooth ball by pulling edges underneath and pinching.
  6. Second rise: Arrange rolls evenly in a greased 9×13-inch pan, spacing slightly. Cover and let rise again for 30-40 minutes until puffy.
