Fresh Cucumber Bites with Cream Cheese and Dill

fresh cucumber bites - featured image

A quick and easy 5-ingredient appetizer featuring crisp cucumber slices topped with a creamy, dill-infused cream cheese mixture. Perfect for potlucks, brunches, or light snacks.

Ingredients

Scale
  • 1 large English cucumber (about 12 inches)
  • 8 ounces full-fat cream cheese, softened
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon garlic powder
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Rinse and dry the cucumber thoroughly. Using a sharp knife, slice the cucumber into 1/2-inch thick rounds. Pat the slices dry with a paper towel to avoid watery bites.
  2. In a mixing bowl, combine the softened cream cheese, chopped fresh dill, garlic powder, and freshly squeezed lemon juice. Blend until smooth and fluffy. Taste and adjust seasoning if needed.
  3. Using a piping bag fitted with a star tip or a small spoon, dollop the cream cheese mixture onto each cucumber slice, swirling outward for a pretty presentation.
  4. Sprinkle a tiny pinch of additional dill or a few cracked black pepper flakes on top. Chill the prepared bites in the fridge for at least 15 minutes before serving.
  5. Arrange on a platter and enjoy immediately, or cover and store in the fridge for up to 24 hours.

Notes

Pat cucumber slices dry to avoid sogginess. Whip cream cheese until fluffy for best texture. Chill cucumber slices and cream cheese mixture before assembling to prevent slipping. Use a piping bag for a neater presentation. For dairy-free version, substitute cream cheese with a dairy-free spread.
