  • 2 medium English cucumbers
  • 8 ounces (225 g) softened full-fat cream cheese
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1/2 teaspoon garlic powder
  • 1 teaspoon fresh lemon juice
  • Pinch of salt and pepper
  • Optional garnish: smoked paprika or small piece of crispy bacon

Instructions

  1. Rinse 2 medium English cucumbers under cold water. Slice into 1/4-inch (6 mm) thick rounds. Pat dry with paper towels to remove excess moisture.
  2. In a mixing bowl, combine 8 ounces softened cream cheese, 1 tablespoon chopped fresh dill, 1 tablespoon chopped fresh chives, 1/2 teaspoon garlic powder, 1 teaspoon fresh lemon juice, and a pinch of salt and pepper. Beat with a hand mixer or whisk until light and fluffy. Adjust seasoning if needed. Add a teaspoon of milk or cream if too thick.
  3. Using a spoon or piping bag, dollop or pipe about 1 teaspoon (5 ml) of the herbed cream cheese onto each cucumber slice, centering the topping.
  4. Optionally, sprinkle a pinch of smoked paprika or a small piece of crispy bacon on top for added flavor and color.
  5. Place the assembled cucumber bites on a platter and refrigerate for 10 minutes before serving to let flavors meld and cream cheese firm up slightly (optional).

Notes

Use English cucumbers for less bitterness and fewer seeds. Soften cream cheese before whipping for best texture. Chill bites before serving for better flavor and firmness. Fresh herbs are preferred over dried for best flavor. Store cream cheese mixture separately if prepping ahead to avoid soggy cucumber slices.
