A fresh and flavorful salad combining ripe tomatoes, creamy mozzarella, fresh basil, and a sweet-tart balsamic glaze. Perfect for quick meals, entertaining, and summer gatherings.

  • 4 medium ripe tomatoes (heirloom, Roma, or vine-ripened), sliced
  • 8 ounces (225 grams) fresh mozzarella cheese, sliced or torn
  • 1/2 cup fresh basil leaves, gently torn
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: garlic powder or minced fresh garlic (a pinch or half a clove)
  • Optional: pine nuts or toasted walnuts
  • Optional: red pepper flakes

Instructions

  1. Rinse 4 medium ripe tomatoes under cold water and pat dry. Slice into 1/4-inch (6 mm) thick rounds or wedges.
  2. Drain the mozzarella ball on a paper towel to remove excess moisture. Slice into 1/4-inch (6 mm) rounds or tear into bite-sized pieces.
  3. On a large platter or shallow bowl, alternate layers of tomato slices and mozzarella pieces, slightly overlapping. Tuck fresh basil leaves between the layers.
  4. Drizzle 2 tablespoons of extra virgin olive oil evenly over the top. Sprinkle sea salt and freshly cracked black pepper to taste. Add garlic powder or minced garlic if desired.
  5. Drizzle about 2 tablespoons of balsamic glaze over the salad in a zigzag or circular pattern.
  6. Optionally, scatter toasted pine nuts or walnuts and sprinkle red pepper flakes if desired. Let the salad sit for 5-10 minutes to allow flavors to meld before serving.

Notes

Use ripe but firm tomatoes to avoid watery salad. Drain mozzarella well to prevent sogginess. Let salad rest 5-10 minutes before serving for flavors to meld. Store leftovers covered in refrigerator and add balsamic glaze just before serving. For homemade balsamic glaze, simmer balsamic vinegar until syrupy.
