Fresh Watermelon Feta Salad with Mint

A refreshing summer salad combining sweet watermelon, salty feta, and fresh mint, perfect for hot days and easy to prepare in under 15 minutes.

  • 6 cups watermelon, cubed (ripe, seedless)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • Pinch of sea salt, to taste
  • Light sprinkle of freshly ground black pepper (optional)

Instructions

  1. Cut off the rind and slice the watermelon into roughly 1-inch cubes.
  2. Crumble about 1 cup of feta cheese into a bowl, avoiding over-crumbling.
  3. Roughly chop 1/4 cup of fresh mint leaves and set aside.
  4. Whisk together 2 tablespoons extra virgin olive oil, juice of one lime, a pinch of sea salt, and a light sprinkle of black pepper in a small bowl.
  5. In a large mixing bowl, gently toss the watermelon cubes, crumbled feta, and chopped mint.
  6. Pour the dressing over the salad and toss lightly to coat evenly without mashing the watermelon.
  7. Chill the salad in the refrigerator for 10-15 minutes before serving to allow flavors to meld.

Notes

Chill the watermelon beforehand for extra refreshment. Use fresh mint leaves and toss gently to avoid crushing the watermelon. Adjust salt and lime juice to taste. For vegan option, substitute feta with plant-based cheese or marinated tofu. Variations include adding cucumber, red onion, nuts, or grilling watermelon cubes.
