Fresh Watermelon Feta Salad with Mint

A refreshing and easy summer salad combining sweet watermelon, salty feta, and fresh mint for a perfect balance of flavors.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled (about 1 cup)
  • Fresh mint leaves, finely chopped (about 2 tablespoons)
  • Extra virgin olive oil, 2 tablespoons
  • Fresh lime juice, from 1 medium lime
  • Sea salt, a pinch
  • Freshly cracked black pepper, to taste (optional)
  • Red onion, very thinly sliced (optional)
  • Toasted pumpkin seeds or pine nuts (optional)

Instructions

  1. Cut seedless watermelon into approximately 1-inch cubes using a sharp knife.
  2. Slice the red onion as thin as possible; soak in cold water for 5 minutes if desired to mellow flavor.
  3. Finely chop about 2 tablespoons of fresh mint leaves using scissors or a knife.
  4. In a small bowl, whisk together 2 tablespoons extra virgin olive oil, juice from one medium lime, a pinch of sea salt, and freshly cracked black pepper.
  5. In a large bowl, gently toss the watermelon cubes, crumbled feta, chopped mint, and sliced red onion.
  6. Add the dressing and toss carefully to avoid releasing too much juice from the watermelon.
  7. Optionally, sprinkle toasted pumpkin seeds or pine nuts on top for added crunch.
  8. Serve immediately for best freshness. If prepping ahead, keep components separate and combine just before serving.

Notes

Use a ripe, seedless watermelon for best sweetness. Chop mint just before serving to keep freshness. Avoid overdressing to prevent sogginess. Rinse feta lightly if too salty. Prepare and toss salad close to serving time to maintain texture.
