A light and refreshing summer drink combining juicy watermelon, fresh mint, lime juice, and a touch of sweetener. Perfect for hot days and casual gatherings.

  • 6 cups seedless watermelon cubes (about 1.5 pounds or 700 grams)
  • 1012 fresh mint sprigs (about 1/4 cup loosely packed)
  • Juice of 1 large lime (about 2 tablespoons or 30 ml)
  • 12 tablespoons honey, agave syrup, or simple syrup (adjust to taste)
  • 2 cups cold water (480 ml)
  • Ice cubes (optional, for serving)

Instructions

  1. Cut about 1.5 pounds (700 grams) of seedless watermelon into cubes and remove any seeds.
  2. Place the watermelon cubes in a blender or food processor and blend on high until smooth, about 30-45 seconds.
  3. Pour the blended watermelon through a fine mesh strainer into a large bowl or pitcher, pressing the pulp to extract as much juice as possible.
  4. Gently bruise 10-12 fresh mint sprigs with a wooden spoon or muddler to release their oils without tearing.
  5. Add the bruised mint leaves, 2 cups cold water, juice of 1 large lime, and 1-2 tablespoons sweetener to the watermelon juice. Stir well to combine.
  6. Refrigerate the mixture for at least 30 minutes to allow the mint to infuse its flavor. Serve immediately if short on time.
  7. Serve over ice cubes and garnish with a mint sprig or thin lime slice if desired.

Notes

Use ripe, juicy watermelon for best flavor. Gently bruise mint leaves to avoid bitterness. Adjust sweetener based on watermelon sweetness. Straining is optional but recommended for smooth texture. Refrigerate for at least 30 minutes to infuse flavors. Can substitute lime with lemon juice or sweetener with stevia or erythritol for low-calorie version.
