  • For the Cream Cheese Frosting:
  • 8 oz (227 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • ½ teaspoon pure peppermint extract
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy cream (optional, to thin frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease if skipping parchment.
  2. In a large bowl, whisk together melted butter and granulated sugar until glossy and well combined, about 2 minutes.
  3. Add eggs one at a time, whisking well after each addition to avoid curdling. Stir in vanilla extract.
  4. In a separate bowl, sift together cocoa powder, flour, and salt.
  5. Gradually fold the dry mixture into the wet ingredients with a spatula until just combined. Avoid overmixing.
  6. Fold in most of the mint chocolate chips, reserving a handful for topping.
  7. Pour batter into the prepared pan and spread evenly. Sprinkle reserved mint chips on top.
  8. Bake for 25–30 minutes. Check doneness by inserting a toothpick into the center; it should come out with a few moist crumbs but no wet batter.
  9. Cool brownies completely in the pan on a cooling rack for at least one hour before frosting.
  10. To make the frosting, beat softened cream cheese and butter together until smooth and creamy, about 3 minutes.
  11. Gradually add powdered sugar, mixing on low speed to avoid a sugar cloud.
  12. Add peppermint and vanilla extracts, then beat on high until fluffy.
  13. If frosting is too thick, add heavy cream 1 teaspoon at a time until spreadable.
  14. Spread the cream cheese frosting evenly over the cooled brownies.
  15. Chill in the fridge for 20 minutes to set if desired.
  16. Slice brownies using a sharp knife warmed in hot water for clean edges and serve.

Notes

Rotate the pan halfway through baking for even cooking. Do not frost warm brownies to avoid melting. Use quality cocoa powder like Ghirardelli for best flavor. For dairy-free or vegan versions, substitute dairy and eggs with plant-based alternatives.
