  • 2 medium-sized lobster tails (68 oz / 170225 g each), thawed if frozen
  • 4 tablespoons unsalted butter (about 57 g), softened
  • 3 large garlic cloves, minced fresh
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Line your baking sheet with foil for easy cleanup.
  2. Using kitchen scissors, carefully cut down the top shell of each lobster tail, stopping just before the tail fin. Gently pry the shell apart to expose the meat, then lift the meat slightly and rest it on top of the shell.
  3. In a small bowl, combine the softened butter, minced garlic, fresh lemon juice, chopped parsley, smoked paprika (if using), salt, and pepper. Mix until smooth and well incorporated.
  4. Brush the garlic butter generously over the lobster meat, reserving a bit for basting halfway through cooking.
  5. Drizzle the lobster shells with olive oil.
  6. Place the prepared lobster tails on the baking sheet and roast for 12-15 minutes until the meat is opaque and firm but still moist. Aim for an internal temperature of 140°F (60°C) if using a thermometer.
  7. Halfway through baking (around 7 minutes in), baste the lobster meat with the reserved garlic butter.
  8. Remove the lobster tails from the oven and let them rest for 2-3 minutes.
  9. Serve immediately, spooning any leftover garlic butter from the baking sheet over the lobster. Garnish with extra parsley and lemon wedges if desired.

Notes

Do not overcook lobster tails to avoid rubbery texture. Use softened butter, not melted, for best coating. Fresh garlic is essential for flavor. Tent with foil if garlic butter browns too quickly. Rest lobster after cooking to redistribute juices. Broiling for last 1-2 minutes can add a slight char but watch carefully to avoid burning.
