  • 3/4 cup (75 g) finely grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 tablespoons (45 g) unsalted butter, melted
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup (30 g) panko breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, mix together melted butter, minced garlic, grated Parmesan, panko breadcrumbs, lemon zest, and chopped parsley until evenly combined.
  3. Pat the cod fillets dry with paper towels. Season both sides with salt and freshly ground black pepper. Place fillets evenly spaced in a baking dish or sheet pan.
  4. Spoon the garlic parmesan mixture evenly over each fillet, pressing down gently to adhere. Optionally, use a basting brush to spread melted butter around the fish edges for extra moistness.
  5. Bake for 12-15 minutes until the cod flakes easily with a fork and the topping is golden brown and crisp. Adjust time for thickness; tent with foil if topping browns too quickly. Let rest 2 minutes before serving.
