A quick and easy homemade dinner featuring tender chicken breasts in a creamy garlic Parmesan Alfredo sauce served over fettuccine pasta. Perfect for cozy weeknights or special occasions.

  • 2 large boneless, skinless chicken breasts, pounded to even thickness

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 large garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup (240 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (optional)
  • 8 ounces (225 grams) fettuccine pasta
  • Chopped fresh parsley, for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels and season generously with salt and pepper on both sides.
  2. Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente, about 10-12 minutes. Drain and set aside, reserving ½ cup of pasta water.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and let rest, then slice into strips or bite-sized pieces.
  4. Reduce heat to medium and melt butter in the same skillet. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  5. Sprinkle flour over the butter-garlic mixture and whisk constantly for about 1 minute to cook out raw flour taste.
  6. Slowly pour in chicken broth while whisking to prevent lumps. Add heavy cream and stir until smooth. Simmer gently for 3-4 minutes until sauce thickens slightly.
  7. Stir in Parmesan cheese and Italian seasoning. Continue stirring until cheese melts and sauce is creamy. If sauce is too thick, add reserved pasta water to loosen.
  8. Return sliced chicken to the skillet, add cooked fettuccine, and toss gently to coat pasta in sauce. Heat through for 1-2 minutes.
  9. Taste and adjust seasoning with salt and pepper as needed. Sprinkle chopped parsley on top and serve immediately.

Let the chicken rest after cooking to keep it juicy. Cook garlic gently to avoid bitterness. Whisk flour into butter and garlic before adding liquids to prevent lumps. Simmer sauce gently to avoid curdling. Use reserved pasta water to adjust sauce consistency. For dairy-free or gluten-free versions, substitute ingredients accordingly.
