  • 1 tbsp sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup (240ml) warm water (about 110°F/43°C)
  • ¼ cup (60ml) olive oil
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ⅓ cup (30g) grated parmesan cheese
  • 1 tsp dried oregano (optional)
  • 1 tsp sea salt or flaky salt
  • Fresh rosemary sprigs (optional, for garnish)

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until it becomes foamy.
  2. Mix the dough: In a large mixing bowl, combine the flour and salt. Add the activated yeast mixture and olive oil. Stir until a shaggy dough forms.
  3. Knead the dough: Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. You can also use a stand mixer with a dough hook for 5-6 minutes.
  4. Let it rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 1-2 hours until it doubles in size.
  5. Prepare the topping: While the dough is rising, mix the olive oil, minced garlic, and oregano in a small bowl. Set aside.
  6. Shape the dough: Once the dough has risen, punch it down to release air. Transfer it to a greased baking sheet and gently stretch it into a rectangle or oval shape.
  7. Second rise: Cover the dough again and let it rise for 30 minutes.
  8. Add the topping: Using your fingers, dimple the surface of the dough. Brush the garlic olive oil mixture over the top, letting it seep into the dimples. Sprinkle with parmesan cheese, sea salt, and rosemary.
  9. Bake: Preheat your oven to 400°F (200°C). Bake the focaccia for 20-25 minutes or until the top is golden brown and the edges are crisp.
