  • ½ cup (100 g) packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • For the streusel topping:
  • ½ cup (63 g) all-purpose flour
  • ½ cup (100 g) brown sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons (57 g) unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together 2 ½ cups (315 g) all-purpose flour, 2 teaspoons baking powder, ½ teaspoon salt, and 2 teaspoons ground cinnamon. Set aside.
  3. In a large bowl, use an electric mixer to beat 1 cup (227 g) softened unsalted butter, ¾ cup (150 g) granulated sugar, and ½ cup (100 g) packed brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in 1 large room-temperature egg and 1 teaspoon vanilla extract until just combined.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed or folding in gently with a spatula until just combined. Avoid overmixing.
  6. In a small bowl, mix ½ cup (63 g) flour, ½ cup (100 g) brown sugar, and 1 teaspoon cinnamon. Cut in 4 tablespoons (57 g) cold, cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently press each mound flat to about ¾ inch thick.
  8. Sprinkle a generous amount of the streusel mixture over each cookie mound.
  9. Bake for 12-15 minutes, or until edges are lightly golden and centers look set but still soft.
  10. Let the cookies cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.

Notes

Chilling the dough before baking helps keep the cookies’ shape and texture. Use fresh cinnamon for best flavor. Press streusel topping gently onto dough to prevent falling off. If dough is too sticky, refrigerate for 15-20 minutes before shaping. Cookies continue to cook slightly after removal from oven; pull when edges are golden and centers are still soft.
