This hearty casserole combines ground beef, tender potatoes, and melted cheese for a comforting and satisfying meal perfect for busy weeknights.

Ingredients

Scale
  • 1 lb ground beef (lean or extra-lean)
  • 45 Russet or Yukon Gold potatoes, peeled and sliced thinly
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, diced finely
  • 1 cup whole milk or dairy-free alternative
  • 2 tbsp unsalted butter, melted
  • 2 tbsp all-purpose flour (or gluten-free flour)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Add the diced onion and cook until softened. Season with garlic powder, paprika, salt, and pepper. Drain any excess grease and set aside.
  3. Peel and slice the potatoes into thin rounds, about 1/8-inch thick.
  4. In a mixing bowl, whisk together melted butter, flour, and milk until smooth. Add a pinch of salt and pepper for flavor.
  5. Grease your baking dish and start layering. Begin with a layer of potatoes, followed by a layer of beef, then a sprinkle of shredded cheese. Repeat until all ingredients are used, ending with cheese on top.
  6. Cover the dish with foil and bake for 35 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Let the casserole cool for 5-10 minutes before serving. Garnish with fresh parsley if desired.
