  • 1/4 cup plain Greek yogurt
  • 3/4 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon fresh lime juice (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry chicken breast. Cut into evenly sized nuggets about 1 to 1.5 inches each.
  2. In a medium bowl, combine taco seasoning with salt and pepper. Toss chicken pieces in seasoning mixture and let sit for 5 minutes if possible.
  3. In another bowl, mix panko breadcrumbs with grated Parmesan cheese.
  4. Add Greek yogurt to the seasoned chicken and stir to coat evenly.
  5. Dip each chicken nugget into the panko-Parmesan mixture, pressing gently to adhere the coating. Place coated nuggets on a plate or tray.
  6. Preheat air fryer to 400°F (200°C) for about 3 minutes.
  7. Lightly spray or brush air fryer basket with oil. Arrange nuggets in a single layer without overcrowding.
  8. Air fry nuggets for 10-12 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
  9. Optionally, squeeze fresh lime juice over nuggets before serving. Serve immediately.

Notes

Do not overcrowd the air fryer basket to ensure crispiness. Use Greek yogurt as a binder for moist nuggets and better coating adhesion. Let nuggets rest a minute after cooking to redistribute juices. For gluten-free, substitute panko with gluten-free crackers or almond flour. Reheat leftovers in air fryer or oven to maintain crispiness.
