  • 2 cups (200g) unsweetened shredded coconut
  • 1/4 cup (60ml) coconut cream
  • 3 tablespoons (45ml) maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • Whole almonds
  • 1 cup (175g) dark chocolate
  • 1 teaspoon (5ml) coconut oil
  • Pinch of sea salt (optional)

Instructions

  1. In a mixing bowl, combine shredded coconut, coconut cream, maple syrup, and vanilla extract. Mix until the ingredients form a sticky, moldable mixture.
  2. Scoop about 1 tablespoon of the mixture and shape it into small rectangles or mounds. Place them on a parchment-lined baking sheet or silicone mold. Press one almond onto the top of each piece. Chill in the freezer for 15 minutes.
  3. Melt dark chocolate with coconut oil in a microwave-safe bowl or double boiler. Stir until smooth and glossy.
  4. Dip each coconut piece into the melted chocolate using a spoon or spatula, ensuring it’s fully coated. Place them back on the parchment-lined baking sheet.
  5. Allow the coated treats to set in the fridge for about 20 minutes or until the chocolate hardens.
  6. Serve and enjoy!

Notes

Freeze the coconut filling before coating to ensure it stays firm. Use finely shredded coconut for a smoother texture. Add a sprinkle of sea salt on top for extra flavor.
