  • 1/3 cup (80ml) ranch dressing (store-bought or homemade)
  • 1/2 cup (50g) shredded cheddar cheese
  • 1 cup (30g) fresh spinach leaves, finely chopped
  • 2 green onions, thinly sliced
  • 1/2 cup (60g) baby carrots, grated (or substitute with bell peppers)
  • 6 small whole wheat tortillas (6-inch / 15 cm)
  • 1 teaspoon (5ml) lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Prep the ingredients: shred or dice the cooked chicken breast into bite-sized pieces. Grate the baby carrots and shredded cheddar cheese. Finely chop the fresh spinach leaves and thinly slice the green onions. This should take about 10 minutes.
  2. Mix the filling: In a large mixing bowl, combine the shredded chicken, ranch dressing, shredded cheese, spinach, green onions, grated carrots, and lemon juice. Add salt and black pepper to taste. Stir until the filling is evenly coated and creamy but not soggy, about 3-5 minutes.
  3. Warm the tortillas: Warm the 6 small whole wheat tortillas for about 15-20 seconds each in the microwave or in a dry skillet to make rolling easier and prevent cracking.
  4. Assemble the wrap bites: Lay each tortilla flat and spoon about 3-4 tablespoons of the chicken ranch filling in a line across the center. Roll the tortilla tightly, folding in the sides as you go, like a burrito. Slice each wrap into 3-4 bite-sized pieces, yielding about 18-24 bites total.
  5. Serve or store: Arrange the wrap bites on a serving platter immediately or refrigerate in an airtight container for up to 2 days. Cover with plastic wrap if making ahead to prevent drying out.

Notes

If the filling is too loose, add extra cheese or ranch dressing to bind better. Avoid overfilling wraps to prevent tearing. Warm tortillas before rolling to prevent cracking. Serve chilled or at room temperature for best flavor. Wrap bites can be frozen individually for up to one month.
