These healthy chicken spinach roll ups are a quick and easy snack or light meal featuring tender chicken, vibrant spinach, and a golden flaky puff pastry exterior. Perfect for busy weeknights or meal prep, they combine comfort food with nourishment.

  • 1 lb cooked chicken breast, shredded or finely chopped
  • 2 cups fresh spinach, finely chopped
  • 1/2 cup low-fat cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat a small pan over medium heat. Add a splash of olive oil and sauté the chopped onion and garlic until translucent and fragrant, about 3-4 minutes. Avoid browning.
  3. In a bowl, combine the cooked chicken, sautéed onion and garlic, chopped spinach, softened cream cheese, Parmesan, oregano, salt, and pepper. Stir until well incorporated and creamy.
  4. On a lightly floured surface, gently roll out the puff pastry sheet to smooth any creases, about 12×12 inches.
  5. Spread the filling evenly over the puff pastry, leaving about a 1-inch border around the edges. Roll the pastry into a tight log, sealing the edge by pinching it together.
  6. Cut the log into 1-inch slices. Place them cut-side down on the prepared baking sheet, spaced about 1 inch apart.
  7. Brush the tops of each roll up with the beaten egg.
  8. Bake for 18-22 minutes, or until the pastry is puffed and golden brown. Check after 15 minutes to avoid burning.
  9. Let the roll ups rest for 5 minutes before serving.

Notes

Do not rush sautéing onions and garlic to build flavor without bitterness. Squeeze excess moisture from spinach to avoid soggy dough. Keep the puff pastry roll tight but not squeezing out filling. If dough is sticky, chill before rolling. Egg wash is essential for golden crust; olive oil can be used as an alternative. Avoid overcrowding baking sheet for even puffing. Can freeze unbaked roll ups and bake from frozen with extra 5 minutes.
