  • ¾ cup (90g) whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • Pinch of salt
  • ⅓ cup (75g) unsalted butter, melted (or coconut oil for dairy-free)
  • ½ cup (120ml) honey (or maple syrup for vegan)
  • 1 large egg (or flax egg for vegan)
  • 1 teaspoon vanilla extract
  • ½ cup (85g) mini chocolate chips (use dairy-free if needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
  2. In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, and salt. Whisk together until well mixed.
  3. In a separate bowl, mix melted unsalted butter, honey, egg, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently using a spatula until just combined. Be careful not to overmix.
  5. Fold in mini chocolate chips, reserving a handful for topping.
  6. Transfer the batter into the prepared baking pan and spread it out evenly. Sprinkle the reserved chocolate chips on top.
  7. Bake for 18-22 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely in the pan before lifting them out using the parchment paper. Slice into squares or rectangles and enjoy!
