  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 cups fresh spinach (or frozen spinach, thawed and squeezed dry)
  • 1 cup canned or jarred artichoke hearts, drained and roughly chopped
  • 1 cup plain, unsweetened Greek yogurt
  • 1 cup part-skim mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish with olive oil or non-stick spray.
  2. Heat a large skillet over medium heat. Add 1 tablespoon of olive oil and sauté the fresh spinach until wilted, about 3-4 minutes. Set aside.
  3. In a mixing bowl, whisk together 1 cup of Greek yogurt, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, 2 minced garlic cloves, 1 teaspoon of onion powder, and a pinch of salt and pepper.
  4. Layer the bite-sized chicken pieces evenly in the greased baking dish.
  5. Scatter the chopped artichoke hearts over the chicken, followed by the sautéed spinach.
  6. Pour the creamy yogurt mixture evenly over the top. Use a spatula to spread it out, ensuring all the chicken and vegetables are coated.
  7. Sprinkle an additional 1/2 cup of mozzarella cheese and 1/4 cup of Parmesan cheese over the casserole for extra cheesy goodness.
  8. Bake uncovered for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the cheese is melted and bubbly.
  9. Let the casserole rest for 5 minutes before serving to allow the flavors to meld.
