Hearty Turkey Chili with Black Beans and Corn

A quick and nourishing turkey chili combining lean ground turkey, black beans, and sweet corn with a cozy blend of spices. Ready in just 30 minutes, it’s perfect for busy weeknights or meal prep.

  • 1 lb lean ground turkey
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) sweet corn, drained
  • 1 can (14.5 oz) diced tomatoes with juices
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • Optional toppings: shredded cheddar cheese, sliced green onions, sour cream, avocado slices, fresh cilantro

Instructions

  1. Dice the onion, mince the garlic, and drain and rinse the black beans and corn thoroughly.
  2. Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat until shimmering.
  3. Add the ground turkey, breaking it up with a spoon, and cook for 5-7 minutes until no longer pink and beginning to brown.
  4. Push the turkey to one side, add the diced onion and cook for 3-4 minutes until translucent.
  5. Add the garlic and cook for another 30 seconds until fragrant.
  6. Sprinkle in chili powder, cumin, smoked paprika, oregano, salt, and pepper; stir well to coat evenly.
  7. Add diced tomatoes with juices and chicken broth, stirring and scraping browned bits from the bottom.
  8. Stir in the drained black beans and corn, reduce heat to low, cover, and simmer for 10-15 minutes.
  9. Taste and adjust seasoning with salt, pepper, or chili powder as needed; add cayenne or hot sauce for more heat if desired.
  10. Serve hot, garnished with your choice of toppings.

Notes

If chili is too thick during simmering, add more broth or water. For thicker chili, mash some beans against the pot side. Use fresh garlic for best flavor. Brown turkey without stirring too frequently to develop richer flavor. Adjust spice level with cayenne or jalapeños. Leftovers taste better the next day and freeze well for up to 3 months.
