A hearty, protein-packed soup that transforms traditional lasagna into a quick and easy comfort food perfect for meal prep.

  • 1 lb lean ground turkey (93% lean)
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tbsp Italian seasoning
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup cottage cheese (small curd)
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Heat a drizzle of olive oil in a large stockpot over medium-high heat. Add the ground turkey, breaking it up with a wooden spoon, and cook until browned and cooked through (about 6–8 minutes). Remove any excess grease.
  2. Add the diced onion and garlic to the pot. Cook until fragrant and softened, about 3 minutes.
  3. Pour in the crushed tomatoes and chicken broth. Stir in the Italian seasoning, salt, and pepper. Bring to a gentle boil.
  4. Break the lasagna noodles into 2-inch pieces and add them to the pot. Reduce heat to medium and cook for about 10 minutes, stirring occasionally, until the pasta is tender.
  5. Lower the heat and gently stir in the cottage cheese. Let it melt into the soup for a creamy texture.
  6. Sprinkle in the grated Parmesan cheese and stir until combined. Taste and adjust seasoning as needed.
  7. Ladle the soup into bowls and garnish with fresh basil leaves. Serve hot with crusty bread if desired.
