Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray, or line it with parchment paper.
  2. Prepare the streusel topping: In a medium bowl, combine the flour, oats, brown sugar, and cinnamon. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until crumbly. Set aside.
  3. Mix the dry ingredients: In a large bowl, whisk together the oats, whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine wet ingredients: In a separate bowl, whisk together the honey, milk, oil, eggs, and vanilla extract until smooth.
  5. Mix the batter: Pour the wet ingredients into the dry ingredients. Using a spatula, gently fold the mixture until just combined. Avoid overmixing—it’s okay if a few lumps remain.
  6. Transfer to the loaf pan: Pour the batter into the prepared pan, smoothing the top for an even surface.
  7. Add the streusel topping: Sprinkle the streusel evenly over the batter, pressing it gently into the surface to help it stick.
