Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream the butter and honey with an electric mixer until light and fluffy, about 2-3 minutes.
  3. Mix in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Gently fold in optional mix-ins like chocolate chips, chopped nuts, or dried cranberries.
  7. Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the tops look slightly puffed.
  9. Let the cookies rest on the baking sheets for 5 minutes before transferring them to a cooling rack.
