  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1/2 cup honey
  • 2 tbsp hot sauce
  • 1 tbsp apple cider vinegar
  • 1/2 tsp red pepper flakes
  • 2 cups cooked white rice or brown rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup chopped scallions
  • Optional: drizzle of ranch or creamy dressing

Instructions

  1. Prepare the chicken: In a mixing bowl, whisk together the flour, cornstarch, paprika, garlic powder, salt, and pepper. In another bowl, beat the eggs. Dip each piece of chicken into the egg mixture, then coat with the flour mixture, shaking off excess.
  2. Fry the chicken: Heat vegetable oil in a skillet or pot to 350°F (180°C). Fry the chicken pieces in batches until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain.
  3. Make the hot honey glaze: In a small saucepan, combine honey, hot sauce, apple cider vinegar, and red pepper flakes. Heat over low until smooth and slightly thickened, about 5 minutes. Taste and adjust spice level as needed.
  4. Assemble the bowls: Divide cooked rice into bowls. Top with crispy chicken, shredded carrots, sliced cucumbers, and a drizzle of hot honey glaze. Sprinkle with chopped scallions and add a drizzle of ranch or creamy dressing if desired.
  5. Serve: Serve immediately while the chicken is crispy and warm. Enjoy!

Notes

Double-dip the chicken for extra crispiness. Fry in batches to avoid overcrowding the pan. Adjust the spice level of the glaze to suit your taste. Prep rice and veggies ahead for faster assembly.
