  • 2 medium carrots, peeled and chopped
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced or smashed
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream (or coconut cream for dairy-free)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: toasted pumpkin seeds, sour cream, fresh herbs like thyme or parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Peel, seed, and cube the butternut squash into roughly 1-inch pieces.
  2. Spread the squash cubes on a baking sheet, drizzle with olive oil, and season with a pinch of salt and pepper. Roast for 25 minutes or until tender and slightly caramelized.
  3. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic. Sauté until softened and fragrant, about 5 minutes.
  4. Add the chopped carrots and roasted squash. Stir to combine and cook for another 5 minutes.
  5. Pour in the vegetable broth, just enough to cover the vegetables. Bring everything to a boil, then reduce the heat and let it simmer for 20 minutes.
  6. Use an immersion blender to puree the soup until smooth. If using a countertop blender, work in batches and blend carefully.
  7. Stir in the heavy cream, cinnamon, nutmeg, and adjust the seasoning with salt and pepper. Simmer for 5 more minutes to let the flavors meld.
  8. Ladle the soup into bowls and garnish with your favorite toppings like toasted pumpkin seeds or fresh herbs.
