  • 4 cups low-sodium beef broth
  • 1/3 cup soy sauce

  • 45 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon brown sugar
  • 2 teaspoons rice vinegar
  • 68 ounces ramen noodles, cooked according to package instructions
  • 1 cup carrots, julienned or thinly sliced
  • 1 cup mushrooms, sliced (optional)
  • Green onions, for garnish
  • Soft-boiled eggs (optional)
  • Sesame seeds (optional garnish)

Instructions

  1. Trim any excess fat from the beef chuck roast. Season generously with salt and pepper.
  2. In a small mixing bowl, combine the soy sauce, hoisin sauce, oyster sauce (if using), sesame oil, minced garlic, grated ginger, brown sugar, and rice vinegar. Whisk until well combined.
  3. Place the beef in your slow cooker. Pour the sauce mixture over the beef, ensuring it’s evenly coated. Add the beef broth and mix gently to combine.
  4. Cover the slow cooker and set it to low heat. Cook for 8 hours, or until the beef is tender and falling apart.
  5. About 30 minutes before the beef is done, add the julienned carrots and sliced mushrooms to the slow cooker. Stir to ensure they’re submerged in the broth.
  6. Once the beef is done, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the broth.
