Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (240ml) milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (115g) softened unsalted butter
  • 1 1/2 cups fresh or frozen cherries, pitted and halved
  • 1/2 cup (100g) brown sugar
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (60g) melted unsalted butter
  • Optional: Sprinkle of cinnamon or nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C). Grease or line your muffin tin.
  2. Prepare the cherries: Pit and halve fresh cherries, or thaw and drain frozen cherries.
  3. In a large bowl, whisk together 2 cups flour, 1 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
  4. In a separate bowl, combine 1 cup milk, 1 egg, 1 teaspoon vanilla extract, and 1/2 cup softened butter. Gradually mix the wet ingredients into the dry until just combined.
  5. Gently fold in the prepared cherries, being careful not to overmix.
  6. In a small bowl, mix 1/2 cup brown sugar, 1/2 cup flour, 1/2 teaspoon salt, and 1/4 cup melted butter until crumbly.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the cobbler topping generously over each muffin.
  8. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

[‘Don’t overmix the batter to avoid dense muffins.’, ‘Use room temperature ingredients for fluffier muffins.’, ‘Test for doneness by inserting a toothpick into the center of a muffin.’, ‘If the cobbler topping looks too wet, add a little more flour until crumbly.’, ‘These muffins freeze beautifully—wrap them individually and store for up to 3 months.’]
