A quick and easy recipe combining tender chicken, tart cranberries, crunchy pecans, and creamy dressing wrapped in a soft tortilla for a flavorful lunch or casual gathering.

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely minced (optional)
  • 1/3 cup mayonnaise
  • 1/3 cup Greek yogurt
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 large flour tortillas

Instructions

  1. Shred or dice your cooked chicken into bite-sized pieces. Chop the pecans and celery, and mince the red onion if using.
  2. In a mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, and a pinch of salt and pepper. Stir until smooth and creamy.
  3. Add the chicken, cranberries, pecans, celery, and onion to the dressing. Stir gently until everything is coated evenly.
  4. Lay out a tortilla on a flat surface. Spoon about 1/2 cup of the chicken cranberry pecan salad onto the center of the wrap, spreading it slightly to form an even layer.
  5. Fold the sides of the tortilla inward, then roll tightly from the bottom to the top. Make sure the filling is secure inside.
  6. Slice each wrap in half diagonally for easy serving. Enjoy immediately or wrap tightly in foil for later.
