These chicken cranberry pecan salad wraps are quick, flavorful, and packed with texture, perfect for lunch or meal prep.

  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped and toasted
  • 1/2 cup celery, diced
  • 2 green onions, thinly sliced
  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 large flour tortillas

Instructions

  1. Dice the celery and green onions. Chop the pecans and toast them lightly in a dry skillet over medium heat for 2-3 minutes until fragrant.
  2. Shred the chicken into bite-sized pieces using your hands or a fork.
  3. In a small bowl, whisk together mayonnaise, honey, Dijon mustard, and a pinch of salt and pepper. Adjust seasoning to taste.
  4. In a large mixing bowl, combine the chicken, cranberries, pecans, celery, and green onions. Pour the dressing over the mixture and toss until evenly coated.
  5. Lay a tortilla flat and spoon the chicken salad mixture onto the center. Fold the sides in, then roll tightly from the bottom to create a secure wrap.
  6. Slice each wrap in half for easier handling and serve immediately or wrap individually in foil for later.

Notes
