  • 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 8 ounces high-quality chocolate (semi-sweet, dark, or milk), chopped
  • 1 tablespoon coconut oil (optional)
  • Optional toppings: crushed freeze-dried strawberries, cocoa powder, chopped nuts

Instructions

  1. Rinse and hull about 1 cup (150g) of fresh strawberries. Chop roughly and place them in a food processor. Blend until smooth but still slightly textured. Alternatively, mash thoroughly with a fork.
  2. In a medium bowl, combine the pureed strawberries with 4 ounces (115g) of softened cream cheese. Beat together until smooth and creamy using a hand mixer or spoon. Add 1/2 cup (60g) sifted powdered sugar and 1 teaspoon vanilla extract. Mix well.
  3. Line a baking sheet with parchment paper. Using a tablespoon or small cookie scoop, portion out the filling and roll into balls between your palms. Place on the baking sheet. Chill in the freezer for 20-30 minutes until firm but not frozen solid.
  4. Chop 8 ounces (225g) of chocolate into small pieces. Melt slowly in a microwave-safe bowl in 30-second bursts, stirring between each, or use a double boiler on low heat. Stir in 1 tablespoon (15ml) coconut oil if using.
  5. Using a fork or dipping tool, dip each chilled truffle into the melted chocolate, ensuring full coverage. Let excess chocolate drip off, then place back on the parchment-lined baking sheet.
  6. Before the chocolate sets, sprinkle optional toppings like crushed freeze-dried strawberries, cocoa powder, or chopped nuts.
  7. Place the coated truffles in the refrigerator for at least 1 hour to firm up completely.

Notes

Use ripe but firm strawberries to avoid excess moisture. Chill the filling before shaping and dipping to prevent melting. Add more powdered sugar if the filling is too wet. Melt chocolate slowly and stir frequently to avoid burning. Avoid water contact with chocolate to prevent seizing.
